Common mistakes
What not to do
Should I add oil to the water?
No. Oil coats the pasta so sauce won’t cling. Buona won’t stick as long as you use enough water and stir in the first minute.
Should I rinse pasta after cooking?
Only for salads. Not for hot dishes: the surface starch helps the sauce stick.
When should I salt the water?
Once it boils, just before adding the pasta: about 10 g per litre.
Why save a cup of cooking water?
Starchy water makes sauce silky and binds it to the pasta. Add a couple of spoonfuls as you toss.
Next: the sauce
